Staphylococcus aureus<\/b> is the most important enterotoxigenic species, although Staphylococcus intermedius, Staphylococcus hyicus,<\/b> and Staphylococcus epidermidis<\/b> are also capable of producing enterotoxins.<\/p>\n
Factors Affecting the Growth of <\/b>Staphylococcus aureus<\/b><\/i><\/p>\n
Temperature:<\/b> The optimum growth temperature is 37\u00b0C<\/b>, with a growth range of 6.7\u201347.8\u00b0C<\/b>. The optimum temperature for enterotoxin production is 40\u201345\u00b0C<\/b>, while toxin production may occur between 10\u201348\u00b0C<\/b>. Growth and toxin production decrease or cease outside these ranges.<\/p>\n
pH:<\/b> The optimum pH for growth is 6\u20137<\/b>, with a growth range of pH 4\u201310<\/b>. Enterotoxin production generally occurs between pH 5.5 and 6.6<\/b> and is inhibited at pH values below 5 or above 9<\/b>.<\/p>\n
Water Activity (aw), Salt Concentration, Nutrients, and Minerals:<\/b> Unlike many other bacteria, S. aureus<\/i> is osmotolerant<\/b> and can grow in environments containing up to 3.5 M NaCl<\/b> and at water activity values below 0.86<\/b>. It is also highly resistant to dry environmental conditions. The minimum water activity and salt concentrations required for growth and toxin production are approximately 0.83 aw \/ 20% salt<\/b> and 0.86 aw \/ 10% salt<\/b>, respectively.<\/p>\n
Atmospheric Conditions:<\/b> Studies have shown that S. aureus<\/i> grows 9\u201317 times more rapidly under aerobic conditions<\/b> than under anaerobic conditions, with enterotoxin production increasing accordingly. Although growth is slower under anaerobic conditions, enterotoxin production can still be detected after approximately 120 minutes of incubation<\/b>.<\/p>\n

Staphylococcal enterotoxins (SE) are primarily associated with foods of animal origin<\/b>, including cooked or undercooked beef, pork, turkey, and poultry<\/b>, milk powder<\/b>, cheese and other dairy products<\/b>, meat and potato salads<\/b>, fish<\/b>, eggs<\/b>, cream-filled pastries<\/b>, and frozen desserts or sauces prepared with milk, sugar, and eggs<\/b>.<\/p>\n
Symptoms of Staphylococcal Food Poisoning<\/b><\/p>\n
Symptoms typically develop 30 minutes to 8 hours<\/b> after consumption, most commonly within 2\u20134 hours<\/b>. Clinical signs include nausea, vomiting, severe abdominal cramps, abdominal pain, and diarrhea<\/b>.
